Fruit for HATCH St Johns Shiraz was fermented on skins in small open top fermenters with gentle plunging and irrigation for 5-10 days to make a powerful, full bodied and opulent wine with vibrance and purity.

The grapes are harvested around the middle of October, at an average yield of 70 hl per hectare. Vinification takes part in stainless steel to preserve the vivid fruit characters of the variety. This is followed by 15-20 days of maceration on the grape skin to add extra structure, flavour and complexity.
